Mimosa’s and Omelets

Today is National Mimosa Day and we love to celebrate with mimosas made with our very own Sparkling Almond and orange juice.  If you like brunch as much as we do try this mimosa with a D’Vine Boursin Omelet, recipe attached  (Or what ever)  It is to die for.  D’Vine Wine Co-owner Diane Hedges created this recipe after seeing a similar one in Food and Wine Magazine not long ago.  She ‘improved’ it by adding other ingredients.  We hope you try it and let us know what your think   We would love to see a picture of your Mimosa’s made with Sparkling Almond and of course your omelet if you decide to try it.  Happy National Mimosa Day.

Boursin Omelet

Ingredients
  • 3 eggs
  • 1 tsp cream or milk
  • 4-5 sliced green onions
  • 1 Tablespoon diced ham
  • 1 Tablespoon Boursin Cheese crumbled
  • 2 tsp butter divided

     

Melt 1 tsp butter in nonstick pan, sauté green onions

Remove onions from pan and place in bowl with ham, cheese.

Melt 1 tsp butter in small nonstick pan or omelet pan 

Beat eggs and milk or cream together with whisk. 

Pour egg mixture in pan and cook on high.  As mixture begins to set, add other ingredients down the middle of egg mixture.  When eggs are fairly set fold over ½ of mixture and continue to cook, turning when needed.  When eggs are done in center remove to plate and serve.  This breakfast pairs nicely with Mimosa’s made with D’Vine Wine Almond Sparkling wine and orange juice.   

This works best in a 10 inch nonstick pan or special omelet pan.
